Ivan uses allot of techniques such as sousvide and confits, he loves fresh truffles, from Piedmont Italy or France. He uses Foie gras, Bottarga and get the freshest seafood, from king scallops to lobsters and fresh local clams.
His meat at Assaggi is aged, the finest cuts prime beef USDA aged for 29 days produces an exceptional result. Aging, The process changes beef by two means. First, moisture is evaporated from the muscle. This creates a greater concentration of beef flavor and taste. Second, the beef’s natural enzymes break down the connective tissue in the muscle, which leads to more tender beef. At Assaggi aged beef could only be served rare/med-rare temperatures.
The fish is cooked to perfection, not over cooked, were you can taste the freshness in your mouth. Ultimately, at Assaggi everything is made fresh from his kitchen, from stocks, sauces and fresh pastas.
